The name of the Aix restaurant "Les Boucans Enfumé" was not chosen at random; it offers cuisine based on smoked meats, that is to say slowly cooked in the smokehouse. Designed as a hacienda, the place is inspired by how things are done on the West Coast, South America, and the West Indies.
